Hechuan lamb noodles

Hechuan lamb noodles are a highly representative landmark cuisine in Hechuan District, Chongqing, and are known as one of the two major schools of Chongqing lamb noodles, alongside Guizhou lamb noodles. It has a long history, dating back to the Qing Dynasty. After being introduced from northern Sichuan via the Jialing River waterway, it was improved by combining local ingredients and flavors. In 2024, Hechuan lamb noodles were selected as one of the "360 Bowls of Chongqing Flavor" in Chongqing's tourism cuisine, becoming an important representative of Ba-Yu flavor
